Zucchini Tots-FromtheGardenTableIf you’re dealing with zucchini overload or have kids you are trying to get more veggies in to (and what parent isn’t???), you have to try these.

I had seen the recipe floating around Pinterest for so long, that during the zucchini season last year, I decided to try them and see what a “zucchini tot” actually tasted like. I am so glad I did. They are so yummy!  AND the kids ate them so fast and wanted more!

I made a note to double the recipe in the future. 

and I do.

and they still ALL get eaten every time.

Zucchini Tots

Ingredients
  1. 1 cup zucchini, grated
  2. 1 egg
  3. 1/4 cup onion, diced
  4. 1/4 cup cheddar cheese, grated (or shredded parmesan)
  5. 1/4 cup breadcrumbs
  6. 1/4 teaspoon salt
  7. pepper to taste
Instructions
  1. Preheat oven to 400 degrees
  2. Spray mini muffin tin with non-stick cooking spray.
  3. Place grated zucchini into cheese cloth and squeeze any water out of it that you can.
  4. In bowl add all of the ingredients and mix well.
  5. Divide evenly between 12 spaces in the mini muffin tin.
  6. Bake for 16-18 minutes until tops begin to turn golden brown.
Notes
  1. *This recipe is easily doubled!

  3. Hi Karen, Saw these and HAD to give them a try. They were really easy to put together and are in the oven and smell heavenly. Can’t wait for them to come out and cool down so I can try them. They will be perfect for my lunches.
